Malvasía is one of the oldest white grape varieties, cultivated on practically all the Mediterranean islands since ancient times. Originally from Greece, its name comes from an Italian deformation of the name of the Greek town of Monemvasia, from where it spread to Naples, Madeira, the Canary Islands, Sitges and Turís. Its age and widespread distribution have led to the creation of sub-varieties, although due to its low resistance to disease, its cultivation has been largely replaced by other varieties.

Production: The grapes are harvested by hand at their optimum ripeness, in 15 kg boxes. Se enfrían a 4ºC durante una noche y se realiza un trasiego estático de 24 horas. Fermentation takes place in stainless steel tanks at low temperatures to preserve the varietal aromas as much as possible, and can last from 3 to 4 weeks. Always respecting the wine’s original character and fruitiness, part of the wine is aged in French oak for several weeks, thereby increasing its aromatic complexity. Finally, the various deposits are consolidated for stabilisation purposes. Clarification is carried out using bentonite and vegetable proteins. Once filtered and bottled, the wine is left to rest in the cellar for a period of time before being sold.
